1 kleine aubergine
1 kleine ui
1/2 rode peper
3 eetlepels olijfolie
3 eetlepels bloem
1 kippenbouillontablet
4 eetlepels crème fraîche
zout, peper
1 eetlepel fijngehakte koriander of peterselie

Schil de aubergine en snijd hem in blokjes.
Pel en snipper de ui.
Hak de rode peper fijn.
Verhit de olie in een soeppannetje en bak hierin de aubergine
met de ui en de rode peper al roerend 5 minuten op matig hoog
vuur.
Roer er de bloem door en vervolgens beetje bij beetje 4 dl
koud water met het bouillontablet.
Breng de soep aan de kook en laat haar 10 minuten zachtjes
koken.
Pureer de soep met een staafmixer of met foodprocessor.
Voeg de crème fraîche, zout en peper toe.
Schep de soep in 2 koppen en strooi er de koriander of
peterselie over.
