3 fijngehakte uien
4 eetlepels ciderazijn
200 gr tomatenpuree
2 dl witte wijn
1 dl worcestershiresauce
4 takjes verse tijm
1 blaadje laurier
2 geperste teentjes knoflook
4 eetlepels honing
1 koffielepel mosterd
peper, zout
tabasco

Verhit de boter in een pannetje en fruit hierin de fijngehakte ui tot ze
lichtjes begint te kleuren.
Verdun de tomatenpuree met de ciderazijn en breng dit samen met de uien
aan de kook.
Voeg na ongeveer 2 minuten koken de wijn en de worcestershiresauce toe
en
breng de saus weer aan de kook.
Doe er tenslotte de afgeplukte tijmblaadjes, de laurier, de knoflook, de
honing en de mosterd bij.
Breng op smaak met peper en zout en eventueel een paar druppels tabasco.

Deze saus kunt u warm of koud serveren bij vlees, gevogelte of vis en
kan
vrij lang in de koelkast worden bewaard.
