1 aubergine in kleine blokjes
zout, peper
200 gr rijst
1 kippenbouillontablet
4 kleine courgettes
3 eetlepels olijfolie
5 eetlepels balsamico-azijn
3 eetlepels gehakte basilicum

Bestrooi de aubergine met zout en laat hem ± 30 minuten
uitlekken.
Kook de rijst met 4 dl water en de verkruimelde bouillontablet volgens de
gebruiksaanwijzing gaar.
Halveer de courgettes in de lengte en verwijder de zaadkernen met een
theelepel.
Kook de halve courgettes in ruim water met 2 theelepels zout in ± 5
minuten beetgaar.
Dep de aubergineblokjes droog en bak ze in de olijfolie in ± 15
minuten gaar. Voeg de azijn toe, laat die inkoken, breng op smaak met zout
en peper en roer er de basilicum door.
Vermeng de rijst met het auberginemengsel en vul de courgettes ermee.
Dit gerecht kunt u warm of koud eten.
