6 schouderkarbonades

Voor de marinade:
60 gr gedroogde tamarinde
1/2 theelepel cayennepeper
1 1/2 theelepel bruine suiker
1/2 theelepel gemalen koriander
1 theelepel ketjap

Voor de saus:
1 eetlepel citroen- of limoensap
2 fijngehakte teentjes knoflook
1 1/2 eetlepel boemboe satépoeder
1 1/2 theelepel gemberpoeder
1 theelepel zonnebloemolie

Vermeng alle ingrediënten voor de marinade en marineer de karbonades
hierin 3-3 1/2 uur. Keer het vlees zo nu en dan om.
Maak een saus van de sausingrediënten.
Leg de karbonades op het rooster van een heet houtskoolvuur en rooster ze
eerst 5 minuten aan elke kant. Bestrijk ze daarna met de saus, rooster ze
weer 5 minuten, draai ze om, bestrijk ze met de saus en rooster ze
nogmaals 5 minuten.
