2 uien
50 gr boter
375 gr aardappelen
300 gr groene erwten uit diepvries
3/4 liter groentebouillon (blokje)
zout, peper, nootmuskaat
200 gr verse zalm
125 gr gerookte zalm in plakjes
1 bosje bieslook
croûtons

Pel en hak uien en fruit ze in de verhitte boter goudgeel.
Schil de aardappelen, snijd ze in 1 cm grote blokjes, voeg ze
met de ontdooide erwten aan de uien toe en giet de bouillon
erbij.
Breng de soep met zout en peper op smaak en 20 laat haar
minuten zachtjes pruttelen.
Pureer de groenten en breng ze met nootmuskaat op smaak.
Snijd de verse zalm in 2 cm dikke en 4 cm lange stukken, kruid
ze met peper, wikkel ze in de gerookte zalm, bind er met
bieslook om en laat ze 10 minuten in de soep trekken (laat
niet koken!)
Bestrooi de soep met bieslook en serveer haar met
croûtons.
