150 gr ham (Ganda, Parma) in fijne reepjes
4-6 gekuiste varkensniertjes
200 gr witte champignons
1 fijngesnipperde ui
cognac, wijn
peterselie
nieuwe aardappeltjes

Kruid de gekuiste varkensniertjes met peper en zout en bak ze in boter
op.
Versnijd de champignons en bak die eveneens op.
Voeg de gesnipperde ui bij de niertjes en men de reepjes ham er goed
onder.
Voeg de champignons toe, flambeer het geheel met cognac en blus met een
beetje wijn; kruid daarna.
Bestrooi met versgehakte peterselie en dien op met gebakken nieuwe
aardappeltjes.
