2 eetlepels Noilly Prat
4 gerookte forelfilets
1/4 liter slagroom
2 eierdooiers
2 eetlepels geroosterde, geschaafde amandelen
4 toefjes waterkers

Laat de visbouillon en de vermout tot 2/3 inkoken.
Snijd 2 forelfilets in schuine repen en pureer de rest vaan de
forelfilets met beetje visbouillon.
Houd enkele lepels slagroom apart.
Roer in een pan de forelpuree en de rest van de slagroom door
elkaar en verwarm dit 3 minuten.
Klop de eierdooiers met de achtergehouden slagroom los en roer
er 2 eetlepels bouillon door.
Voeg het eimengsel al roerend aan de puree toe en verwarm
alles zachtjes 2 minuten (laat niet koken!).
Verdeel de soep over 4 diepe borden en garneer met de repen
forelfilet, de amandelen en de toefjes waterkers.
