Franse tomatensoep met courgette

400 gr tomaten
1 ui
20 gr boter
1 courgette in plakjes
1 dl gebakken tomatensaus (uit een pakje)
2 runderbouillontabletten
1 blikje maïs
75 gr ontbijtspek
1 theelepel cayennepeper
zout
3 eetlepels fijngeknipte bieslook

Ontvel en ontpit de tomaten en snij ze in stukjes.
Fruit de fijngehakte ui in de boter goudbruin.
Voeg de tomaatstukjes en de plakjes courgette toe en bak deze
2 minuten mee.
Voeg 6 dl heet water, de tomatensaus en de bouillontabletten
toe en laat de soep 20 minuten zachtjes koken.
Bak intussen het spek in een droge koekepan knapperig uit.
Laat de uitgelekte maïs in de soep warm worden.
Breng de soep op smaak met cayennepeper en zout.
Garneer met wat fijngeknipt bieslook en de plakjes spek.
