500 gr gepelde tomaten (uit blik)
1 groene paprika
1 ui
1 komkommer
1 teentje knoflook
2 eetlepels olijfolie
het sap van 1 citroen
1/2 theelepel suiker
3 eetlepels peterselie

Snijd de tomaten in parten en wrijf ze door een
groentezeef.
Maak de paprika schoon en snijd hem zo klein mogelijk.
Snipper de ui en schil de komkommer.
Halveer die, verwijder de pitjes en snijd hem klein.
Strooi wat zout over de ui en de komkommer en laat ze een half
uur staan.
Vermeng de gepureerde tomaten, paprika, ui, komkommer,
geperste knoflook
met de olie, het citroensap en de suiker en voeg 1 1/2 liter
ijskoud water toe.
Zet het geheel tenminste 1 uur in de koelkast.
Breng op smaak met zout en peper.
Strooi er als laatste de peterselie over.
