3 eetlepels plantaardige olie
75 gr groene kerriepasta
6 dl kokosmelk (blik)
600 gr kipfilet in plakjes
2 theelepel suiker
2 eetlepels vissaus (nam pla)
10 in vieren gesneden witte ronde aubergines (Maghue pho)
200 gr heel kleine aubergines (Maghue poeang)
3 rode en 3 groene pepers
8 citroenblaadjes (djeroek poeroet)
50 gr zoete basilicum (Horapha)

Verhit de olie en verwarm de kerriepasta hierin 3-4 minuten, maar laat
niet aanbakken.
Voeg de kokosmelk, 2 dl water en de kip toe en laat het mengsel op zacht
vuur 10 minuten koken.
Voeg de suiker, de vissaus en beide soorten aubergine toe en laat het
mengsel nogmaals 5 minuten koken.
Voeg als laatste de pepers, het citroenblad en de basilicum toe, maar laat
ze niet meekoken.
Serveer met gekookte Thaise pandanrijst.
