4 eetlepels boter
200 gr venkel in reepjes
2 kipfilets á 125 gr
zout, versgemalen peper
1 grof gesneden ui
2 uitgeperste teentjes knoflook
1 dl droge witte wijn
1 1/2 dl kippenbouillon (van tablet)
1 dl crème fraîche
4 takjes verse dragon, waarvan 2 takjes fijngesneden
4 fijngesneden sprietjes bieslook

Verhit 2 eetlepels boter in een ruime pan.
Roerbak de venkel hierin 3 minuten en schep de groente uit pan.
Bestrooi de kipfilets met peper en bak ze in de achtergebleven boter in 15
minuten rondom bruin en gaar.
Bestrooi de gare kip met zout.
Verhit intussen in een andere pan 2 eetlepels boter en bak de ui en de
knoflook hierin 3 minuten.
Voeg de wijn en de bouillon toe en laat het mengsel 10 minuten zachtjes
inkoken.
Roer de crème fraîche, de dragon, de bieslook en de venkel
erdoor en breng de saus op smaak met zout en peper.
Leg de kip en de venkel met de saus op de borden en garneer met de takjes
dragon.
