3 eetlepels olijf- of zonnebloemolie
1 schoongemaakte en kleingesneden ui
2 uitgeperste teentjes knoflook
2 eetlepels tomatenpuree
2 eetlepels fijngehakte peterselie
350 gr schoongemaakte en in smalle reepjes gesneden
savooiekool
1 1/2 liter bouillon
100 gr rijst
zout, peper

Verhit de olie in een grote pan en fruit hierin de
kleingesneden ui en de uitgeperste knoflook ± 3
minuten.
Voeg de reepjes kool toe en fruit die even mee.
Voeg de bouillon en de tomatenpuree toe en breng het geheel
aan de kook.
Zet het vuur laag, leg een deksel op de pan en laat de soep
± 15 minuten zachtjes koken.
Roer de rijst erdoor en laat die in ± 20 minuten
zachtjes gaar koken.
Roer de fijngehakte peterselie door de soep en maak het geheel
op smaak met wat zout en peper.
