2 geschilde avocado's
1/8 liter slagroom
3 eetlepels citroensap
1/2 eetlepel olie
2 lente-uitjes in ringetjes van ± 1 cm
1 eetlepel korianderzaadjes
1 dl witte wijn
7 1/2 dl kippenbouillon
150 gr Hollandse garnalen
2 eetlepels fijngehakte korianderblaadjes
zout, peper
dunne reepjes citroenschil

Pureer het vruchtvlees van de avocado's.
Roer de slagroom en het citroensap erdoor.
Bak in de olie de lente-uitjes met de korianderzaadjes
± 4 minuten.
Schenk de wijn erbij, roer de aanbaksels los en laat de
alcohol verdampen.
Voeg de bouillon toe en breng de soep aan de kook.
Roer van het vuur af de avocadopuree, garnalen en fijngehakte
koriander
erdoor.
Laten afkoelen.
Garneer de soep met reepjes citroenschil.
Geef er sneetjes stokbrood met knoflookrouille bij.
Eet u de soep zonder rouille, maak de soep dan wat pittiger
met tabasco.
