2 bosuitjes
2 1/2 dl Umer of (Bulgaarse) yoghurt
zout, peper uit de molen
2 theelepels geconcentreerde kippenbouillon
enkele druppels limoen- of citroensap
25-35 gr gerookte zalm in dunne plakken
1 eetlepel kleingesneden bieslook

Boen het stuk komkommer schoon of schil het, verwijder het
uiteinde en
rasp de komkommer grof.
Maak de bosuitjes schoon en snijd ze in uiterst smalle
ringetjes.
Vermeng in een kom de Umer of de yoghurt met de komkommer en
de bosuitjes,
voeg zout, peper, de geconcentreerde kippenbouillon en het
limoen- of
citroensap toe en oer er 3 eetlepels koud water door.
Klop alles met een garde even flink op en plaats de kom tot
het gebruik in
de koelkast.
Snijd of hak de zalm in snippers en schep de helft ervan door
de soep.
Doe de soep over in kommen en garneer met zalmsnippers en
bieslook.
