1 kleine rode paprika
100 gr chorizo (stukje)
25 gr feta
1 eetlepel olie
1 blikje rode bonen in chilisaus (netto 400 gr)
1/2 eetlepel Mexicaanse kruidenmix
3/4 liter vleesbouillon
1 blikje maïs (netto 150 gr)
2 eetlepels fijngeknipte verse koriander

Pel en snipper de ui.
Maak de paprika schoon en snijd hem in kleine stukjes.
Snijd de chorizo en de feta in kleine blokjes.
Verhit de olie in een pan, bak de chorizoblokjes zachtjes uit
en schep ze op keukenpapier.
Fruit de ui en de paprika in het bakvet.
Houd 3 eetlepels rode bonen apart en voeg de rest van de bonen
met saus, de Mexicaanse kruiden en de bouillon aan het
uimengsel toe.
Pureer de soep met een staafmixer.
Schep de maïs en de chorizo erdoor en warm de soep nog
± 5 minuten zachtjes door.
Roer tenslotte de feta en de koriander door de soep.
Lekker met tortillachips.
