(Fusilli alla puttanesca)

400 gr spiraalmacaroni
150 gr zwarte olijven
2 geperste teentjes knoflook
500 gr ontvelde tomaten
peterselie
2 eetlepels olijfolie
zout, zwarte peper
4 ansjovisfilets
2 eetlepels kappertjes

Verhit de olijfolie en fruit de knoflook 2 minuten op zacht vuur.
Doe er de in stukken gesneden tomaten en de ansjovis bij.
Snijd de olijven in stukjes en doe ook die erbij.
Laat het geheel op zacht vuur 20 minuten stoven (voeg eventueel een scheutje
water toe).
Doe er de kappertjes en de peterselie bij en breng op smaak met peper.
Breng 4 liter water aan de kook, voeg 1 eetlepel zout toe en kook de pasta in
10 minuten beetgaar.
Laat uitlekken en giet de saus erover.
