75 gr ansjovisfilets
100 gr zwarte olijven zonder pit
1 geperst teentje knoflook
50 gr uitgelekte en drooggedepte kappertjes
2 theelepels mosterd
3 eetlepels verse basilicum
1/2-1 dl olijfolie
peper

Leg de ansjovis in melk en week ze 30 minuten.
Laat de ansjovis uitlekken en pureer ze met de olijven, de knoflook, de
kappertjes, de mosterd en de basilicum (het mengsel moet niet te fijn
zijn).
Schenk de olie er in een dun straaltje bij en breng de ansjovispesto met peper
op smaak.
Deze pesto kan onder olie ± 2 weken in de koelkast worden bewaard en kan
ook worden ingevroren.
