Verhit 3 eetlepels olijfolie en bak 125 gr fijngesneden ontbijtspek in ±
10 minuten uit.
Voeg 1 fijngesneden ui, 2 geperste teentjes knoflook, 1 fijngesneden wortel en
1 fijngesneden stengel bleekselderij toe en bak die ± 5 minuten mee.
Roer er 500 gr gehakt door en bak die in 5-10 minuten rul.
Voeg 1 1/2 dl rode wijn toe, breng de saus aan de kook en laat de wijn op
middelhoog vuur verdampen.
Voeg 1 dl melk en nootmuskaat toe en laat ook de melk verdampen.
Breng de saus met wat zout en peper op smaak.
Roer er 1 blik tomaatblokjes (400 ml), 1 eetlepel suiker en 2 theelepels
fijngesneden marjolein of oregano door en laat de saus op zacht vuur ± 2
uur sudderen (het vocht is dan verdampt en de saus heeft een mooie donkere
kleur).
Serveer de saus bij pasta.
