400 gr konijnfilet
1 ui
100 gr ontbijtspek of bacon in blokjes
25 gr boter
1 glas witte wijn of bouillon
2 dl koffieroom
1-2 eetlepels mosterd
peper
2 eetlepels fijngesneden dragon of bieslook

Snijd de konijnfilet in blokjes, pel en snipper de ui.
Bak in een braadpan het spek in de boter krokant, voeg de stukjes konijnfilet
toe en bak ze rondom lichtbruin.
Draai het vuur laag en bak de stukjes ui 3 minuten mee.
Schenk de wijn in de pan en roer de aanbaksels op de bodem los.
Voeg de room toe en breng het geheel aan de kook.
Breng de saus met mosterd, zout en peper op smaak.
Roer er op het laatst de dragon door.
Serveer met pasta naar keuze.
Lekker met koolsalade of spruitjes.

Variatie:
Bak met de ui 150 gr champignons en 2 gesnipperde bosuitjes mee.
Vervang de konijnfilet door kalkoenfiletreepjes.
