2 groene paprika's
1 komkommer
1 ui
een mespuntje gedroogde oregano
1/2 dl olijfolie
peper, zout
250 gr elleboogjespasta (pipe rigate)
150 gr provolone picante
20 zwarte olijven

Snijd de paprika's doormidden, verwijder de zaadjes en snijd het vruchtvlees in
dunne reepjes.
Schil de komkommer en snijd of schaaf hem in dunne plakjes.
Snijd de ui in ringen.
Doe de groenten in een kom en breng ze op smaak met oregano, olie, peper en
zout.
Kook de elleboogjes beetgaar, giet ze af en spoel ze met koud water.
Laat ze uitlekken en meng de groenten erdoor.
Snijd de provolone in stukjes en verdeel die over de pasta.
Snijd het vruchtvlees van de olijven in dunne plakjes van de pit af en strooi
die over de salade.
