zout
1 pakje verse tagliatelle (250 gr)
3 sjalotjes
1 eetlepel olijfolie
1 eetlepel verse tijmblaadjes of 1 theelepel gedroogde
1 bekertje slagroom (1/4 liter)
150 gr gorgonzola
melk
100 gr gepelde walnoten
peterselie voor de garnering

Kook de tagliatelle in een pan met ruim kokend water en zout beetgaar.
Maak intussen de saus: pel de sjalotjes en snipper ze grof.
Verhit in een steelpan de olijfolie en fruit de sjalotjes glazig.
Snijd de gorgonzola in stukjes, voeg die al roerend aan de sjalotjes toe, roer
de tijm en de slagroom erdoor en verwarm het geheel zachtjes tot de kaas is
gesmolten.
Breng op smaak met (zout) en peper.
Voeg, als de saus te dik wordt, wat melk toe.
Giet de tagliatelle goed af en schep de saus erdoor.
Verdeel de tagliatelle over 2 diepe borden en strooi er de walnoten over.
Garneer met peterselie.
