Rasp de citroenschil, pers ze vervolgens uit en maak van het sap met peper
en zout een marinade.
Leg de kip daar enige tijd in en leg de kip daarna in de - eerst in water
ondergedompelde - Römertopf.
Voeg er de citroenrasp, een ruim glas witte wijn, enkele lepels zure room,
desgewenst nog wat van de marinade en de peterselie aan toe en zet de
gesloten Römertopf 1 uur in een oven van 175°C.
Haal er dan het deksel af en zet de pot nog eens een kwartier in de oven.
