1 maïskip van ± 1 kg
75 gr boter
150 gr rauwe ham in kleine reepjes
3 vleestomaten, ontveld en in parten
12 kleine sjalotjes
1 laurierblaadje
2 teentjes knoflook
2 eetlepels mosterd
1 dl witte wijn
3/4 dl port
zout, peper
een Römertopf of ovenschaal

Dompel de Römertopf 30 minuten in koud water onder.
Snijd de kip in 6-8 stukken.
Vet de Römertopf met boter in en leg de kip, rauwe ham, tomaten,
sjalotjes en laurier in de schaal.
Smelt de rest van de boter, roer er de knoflook, mosterd, wijn, port, zout
en peper door en schenk het mengsel over de kip.
Zet de schaal zonder deksel in de oven, stel de oven in op 225°C en
braad de kip in 1 uur en 15 minuten goudbruin.
Serveer met in de schil gebakken aardappelen:
Borstel de aardappelen goed schoon en bak ze 1 uur in de oven op
200°C. Kruis de aardappelen halverwege de baktijd aan de bovenkant in
en strooi er een beetje grof zeezout in.
