2 eetlepels boter
2 uien
1 wortel
2 tomaten
1 citroen
1/2 liter bier
peper, zout

Bestrooi de schapenbout met peper en zout, wrijf hem met citroensap in
en
laat dit enige tijd intrekken.
Bak het vlees in de hete boter aan alle kanten bruin en doe het met de
gesnipperde uien, de in schijfjes gesneden wortel, de ontvelde en in
vieren gesneden tomaten en het citroensap over in de natgemaakte
Römertopf.
Leg het deksel op de schotel, zet hem in een koude oven, die op 220°C
is ingesteld en smppr het vlees in ± 21/2 uur gaar.
Begiet het vlees na een uur en verder ieder half uur met iets verwarmd
bier.
