Gevulde varkensschnitzels met wortel en prei

Snijd 10 cm van 1 dunne prei in de lengte in reepjes.
Snijd 10 cm winterwortel in dunne reepjes en kook die 3 minuten in kokend
water met wat zout.
Blancheer de laatste minuut de preireepjes mee en laat de groenten
uitlekken.
Verdeel de groenten overdwars over 4 ongepaneerde schnitzels, druppel er
wat sesamolie over, vouw de schnitzels dubbel en steek ze met een
cocktailprikker vast.
Klop 1 klein ei los met 1 theelepel sojasaus, 1 theelepel gemberpoeder,
peper en zout.
Schep 4 eetlepels paneermeel en 2 eetlepels geraspte kokos door elkaar en
wentel de schnitzelpakketjes eerst door het ei en dan door het
paneermeel.
Verhit 40 gr boter, zet het vuur direct lager en bak de schnitzelpakketjes
op halfhoog vuur in ± 20 minuten aan beide kanten gaar.
Lekker met gebakken aardappeltjes en stoofpeertjes.
