750 gr varkensschenkelstukken met been
1 liter water
zout
80 gr boter
1 ui
1 rode paprika
2 eetlepels bloem
2 laurierblaadjes
8 jeneverbessen
1/2 theelepel karwijzaad
1/4 liter droge witte wijn
1 eetlepel mosterd
500 gr wijnzuurkool

Kook de varkensschenkelstukken in het water met zout tot het vlees van het
been loslaat.
Bak ze dan in de boter met de ui, de rode paprika en de bloem en stoof dit
1/2 uur met de laurierblaadjes, de jeneverbessen, het karwijzaad, de wijn,
de mosterd en de wijnzuurkool.
Serveer met aardappelpuree.
