2 uien
1 kg courgettes
6 eetlepels boter
2 kruidenbouillontabletten
1 theelepel tijm
3/4 liter melk
3/4 liter water
4 takjes peterselie
100 gr achterham

Pel de uien en snipper ze fijn.
Was de courgettes, verwijder de kroontjes en snijd ze in
stukken.
Verhit in een pan 2 eetlepels boter en fruit de ui ± 3
minuten.
Voeg de courgette, de bouillontabletten, de tijm, het water en
de melk toe
en laat ± 20 minuten koken.
Zet een draaizeef (passe-vite) op een andere pan, giet de soep
erdoor en
maal de courgette tot puree.
Laat afkoelen tot gebruik.
Knip de peterselie in een kopje fijn.
Snijd de ham in dunne reepjes.
Verwarm de soep al roerend ± 3 minuten en klop er van
het vuur af de rest
van de boter door.
Verdeel de soep over 6 borden en strooi er de ham en de
peterselie over.
