200 gr winterwortel
1 citroen
2 eetlepels Yogonaise
1 eetlepel olijfolie
zout, peper
1 eetlepel fijngehakte verse koriander of peterselie

Maak de wortel schoon en rasp hem.
Boen de citroen schoon, rasp de helft van de gele schil dun af en pers de
citroen uit.
Roer in een schaal een dressing van het citroensap, de geraspte
citroenschil, de Yogonaise, de olie en zout en peper naar smaak en schep
de wortel door de dressing.
Laat de wortelsalade nog 1/2 uur staan, zodat de smaak goed kan
intrekken.
Schep de salade nog een keer goed door en strooi er de koriander over.
