120 gr Mung Noedels
180 gr kleine scampi's zonder schaal
1 eetlepel olie
1 kippeborst in stukjes
zout, peper
1 in stukjes gehakt rood chilipepertje
1 in stukjes gehakt groen chilipepertje
3 eetlepels limoensap
2 eetlepels Nam pla (Thaise vissaus)
1 theelepel suiker
3 sjalotjes in dunne schijfjes
verse korianderblaadjes
sla ter garnering
gebakken sjalotjes ter garnering

Maak de noedels klaar volgens de gebruiksaanwijzing en laat ze
afkoelen.
Blancheer de scampi's in kokend water tot ze roze zijn geworden.
Haal ze uit het water en laat ze afkoelen.
Doe olie in een wok of pan, voeg de kip toe en sauteer tot ze goudbruin
is.
Kruid met peper en zout en laat afkoelen.
Meng de pepertjes, het limoensap, de Nam pla, suiker, sjalotjes en
korianderblaadjes.
Voeg de kip, de scampi's en de noedels toe.
Meng goed.
Serveer op een slabedje en garneer met gebakken sjalot.
