750 gr (vastkokende) aardappelen
500 gr sperziebonen
150 gr spekreepjes
3 eetlepels balsamicoazijn
2 eetlepels (extra vierge) olijfolie
20 sprietjes bieslook
zout, peper
200 gr varkensrollade (vleeswaren)

Schil de aardappelen, was ze, snijd ze in blokjes, kook die in kokend
water in ± 8 minuten beetgaar en giet ze af.
Haal de sperziebonen af, breek ze, kook ze in kokend water in ± 15
minuten gaar en giet ze af.
Bak de spekreepjes in een droge koekepan in ± 3 minuten uit, haal
ze uit de pan en schenk het spekvet in een kom.
Klop een dressing van het spekvet met de azijn en de olijfolie.
Was de bieslook, knip het fijn en voeg het aan de dressing toe.
Breng op smaak met zout en peper.
Snijd de rollade in reepjes.
Meng de ingredieënten bij elkaar en schenk de dressing erover.
