1 grote kop volle rijst
1 theelepel kurkuma (geelwortel)
zeezout
2-3 tomaten
1/2 komkommer
1 ui
100 gr tofu
3 eetlepels olijfolie
2 eetlepels appelazijn
een snufje kerrie
versgemalen peper

Was de rijst tot het water helder wordt, zet hem met 2 koppen water, wat
zeezout en kurkuma op en laat 1 uur zachtjes koken.
Snijd de tomaten in partjes en de komkommer in blokjes.
Hak de ui grof en snijd de tofu in blokjes.
Maak een vinaigrette van de olie, de azijn, peper, zout en een snufje
kerrie en roer deze door de afgekoelde rijst.
Vermeng de salade met de rest van de ingrediënten en dien op met
volkoren stokbrood.
