1 krop radicchio
4 worteltjes
2 bosuitjes
4 zoetzure augurkjes
250 gr oesterzwammen
200 gr feta
3 eetlepels olijfolie
2 eetlepels medium dry sherry
1 eetlepel honing
2 theelepels pittige mosterd
1 theelepel Italiaanse kruiden
peper, zout
100 gr spekreepjes

Maak de radicchio schoon en snijd hem in dunne reepjes.
Schrap de worteltjes en snijd ze in dunne plakjes.
Maak de bosuitjes schoon en snijd ze in ringetjes.
Snijd de augurkjes in plakjes.
Snijd de oesterzwammen in reepjes van ± 1 cm breed.
Snijd de feta in blokjes.
Klop een dressing van de olie, de sherry, de honing, de mosterd, de
kruiden en wat peper en zout.
Bak de spekreepjes in een droge koekepan knapperig uit.
Neem de spekreepjes uit de pan en bak de oesterzwammen 3 minuten in het
spekvet.
Schep de sla met de worteltjes, de bosui en de augurk door elkaar en
verdeel er de gebakken oesterzwammen, de feta en de spekjes over.
Schenk de dressing erover en schep de salade aan tafel om.
Serveer met warm ciabattabrood.
