750 gr pompoen
1 ui
2 teentjes knoflook
3 eetlepels olie
1 liter groentebouillon
2 eetlepels sherry
peterselie
peper, zout
1 dl Sojacuisine (natuurvoedingswinkel)
amandelschaafsel

Schil de pompoen en snijd het vruchtvlees klein.
Snipper de ui en pers de knoflook uit.
Fruit de ui met de knoflook in de olie glazig, voeg de pompoen
toe en laat
dit een paar minuten zachtjes stoven.
Schenk er de bouillon en de sherry bij, voeg wat fijngeknipte
peterselie
en naar smaak peper en zout toe en laat de soep in 30 minuten
zachtjes
gaar koken.
Roer er de sojacuisine door, schep de soep in de borden en
bestrooi
die met wat geroosterd amandelschaafsel.
