Stoof 400 gr abrikozen in het sap van 2 sinaasappels (rasp de schil van
één ervan).
Laat ze afkoelen en snijd ze in vieren.
Maak een beslag van 50 gr bloem, 50 gr suiker, 1 zakje vanillesuiker, 3
eieren, 3 dl melk, de sinaasappelrasp en 1 eetlepel gesmolten boter en
Laat dit minstens 1 uur staan.
Giet het beslag dan in ingevette quiche- of andere lage ovenschotel
verdeel er de abrikozenstukjes over en bak de clafoutis 40-45 minuten in
een op 175°C voorverwarmde oven.
Verlaag de temperatuur na 20-25 minuten tot 160°C.
Eet de clafoutis lauwwarm, bestrooid met wat suiker.

Tip: Verrijk het beslag met 1 eetlepel rum.
