frituurolie
14 diepvriesloempiavelletjes (toko)
1 eetlepel gemalen kaneel
4 eetlepels poedersuiker
200 gr abrikozen (blik, 425 gr)
4 bolletjes stracciatella-ijs
12 kleine gekleurde suiker-eitjes
12 blaadjes munt

Verhit de frituurolie tot 180°C.
Snijd de loempiavellen in luciferdunne reepjes.
Vermeng de kaneel en de poedersuiker.
Bak de deegreepjes in de frituurolie in 2 minuten krokant, laat ze
uitlekken en schud ze met de kaneelsuiker om.
Pureer de abrikozen met 4 eetlepels van het sap uit het blik.
Schik de deegreepjes als vogelnestjes op de bordjes, laat het midden vrij
en schep de saus eromheen.
Leg in elk nestje een bolletje ijs en garneer met de paaseitjes en de
muntblaadjes.
