2 eetlepels ganzevet (delicatessewinkel) of reuzel
2 grote gesnipperde uien
6 gehakte teentjes knoflook
1 eetlepel bloem
1 takje tijm
1 blaadje laurier
zout, peper
2 gesplitste eieren
azijn
geroosterd witbrood in grove stukken
(geraspte gruyère)

Bak de ui en de knoflook in het ganzevet ± 10 minuten
zachtjes (laat niet kleuren).
Strooi de bloem erover en voeg 1 liter water, de tijm,
laurier, zout en peper toe.
Breng de soep aan de kook en laat haar ± 40 minuten
zachtjes koken.
Roer de eiwitten door de soep.
Roer de dooiers met 5 druppels azijn los en voeg dit aan de
soep toe (laat niet meer koken).
Verdeel het brood over de borden (strooi de kaas erover) en
schenk de soep erover.
