1 1/2 liter visbouillon of half mosselvocht half water
1 laurierblad
1/2 theelepel zout
versgemalen zwarte peper
3 eetlepels peterselie
1 mespunt saffraanpoeder
500 gr schelvisfilet of andere stevige vis
het Sap van 1 citroen
3 licht losgeklopt eierdooiers

Breng de visbouillon in een stevige pan aan de kok.
Voeg de laurier, zout, peper, 2 eetlepels peterselie en de
saffraan toe en laat de bouillon 25 minuten zachtjes
trekken.
Voeg de vis toe en laat die 15 minuten pocheren.
Klop druppel voor druppel het citroensap door de eierdooiers;
blijf goed kloppen.
Voeg er dan weer druppelsgewijs de visbouillon bij en klop tot
alles goed is opgenomen.
Roer het eimengsel door de soep en schep die direct in de
soepkommen. Garneer de soep met de rest van de peterselie.
