Blancheer 800 gr rijpe tomaten, ontvel ze en snijd ze in
stukjes.
Pel en snipper 1 ui.
Maak 1 prei (alleen het wit) en 2 sjalotten schoon en snipper
ze fijn.
Verhit 3-4 eetlepels zonnebloemolie in een braadpan en fruit
de ui, tomaat, sjalot en prei hierin 4 minuten.
Pureer dit mengsel.
Verwarm 1 1/4 liter kippenbouillon en meng er de tomatenmoes,
1/2 theelepel witte peper, zout naar smaak, 2 theelepels
suiker en 1 theelepel gemberpoeder door..
Voeg eventueel 3-4 fijngehakte gemberbolletjes op siroop met 2
eetlepels siroop toe (laat de suiker dan weg).
Breng de soep aan de kook en laat haar ± 2 minuten
pruttelen.
Vermeng 1 1/2 eetlepel maïzena met 3-4 eetlepels water en
bind hiermee de soep al roerend.
Breng op smaak met fijngesneden sjalot of prei en serveer
direct.
